FINALLY!

A year and a half ago at my niece's baby shower I had the most WONDERFUL enchilada's! I've tried on my own to duplicate them, but haven't had any luck! Last weekend we went out to dinner at a Mexican restaurant we had thought was closed for business. Lucky for us they weren't. While having some great enchilada's I drank a couple of Sangria's. Let me tell you, the next day I would have loved to have been able to have found some hangover cures because my head definitely did NOT like me!
